Destemmed and macerated 8-10 days with gentle pump-overs rather than punch-downs to preserve finesse, then aged in around 25% new oak, the wine reflects the site’s full expression from top to bottom of the slope. It is a benchmark Volnay Premier Cru from one of Burgundy’s most storied estates.
