Prieuré Saint-Jean de Bébian is one of the most storied estates in the Languedoc, founded by Benedictine monks in 1152 in Pézenas. Pautel is made from Syrah vines planted in 1973 with cuttings sourced from Gérard Chave’s legendary Hermitage estate, on a parcel now farmed biodynamically as part of terroir recognized among the top tier of the Languedoc’s new classification system.

Fermented partly whole-bunch and aged twelve months in a large foudre, the wine opens with smoke, pepper, and dark fruit typical of old-vine Syrah. The palate delivers silky tannins and real depth from the vineyard’s gravelly, clay soils.
