La Cuvee du Papet is Clos du Mont-Olivet’s most prestigious wine, named for Joseph Sabon, the estate’s founder and grandfather (“papet”) of current winemaker Thierry Sabon. The wine is sourced from the family’s oldest Grenache vines, many planted in 1901, and produced only in the finest vintages.
