The wine underwent 100% whole-cluster fermentation without crushing, using only native yeasts in historic open-top wooden vats.
Crucially, Bizot utilizes zero sulfur additions during fermentation and maturation, adding only an imperceptible trace at bottling. The wine aged in 100% new French oak barrels sourced from elite coopers, resting on fine lees without racking or stirring. In addition, the wine remained unfined and unfiltered, preserving its pure textural essence. Furthermore, bottling was performed entirely by hand, barrel by barrel, under protective cellar gravity.
