Description

Overview & Provenance

The 2021 Domaine Takahiko Nana-Tsu-Mori Pinot Noir is one of the most celebrated cult natural wines in Japan. Visionary vigneron Takahiko Soga crafts this wine from a 4.6-hectare vineyard in the cool coastal hills of Yoichi, Hokkaido. As a result, the bottling delivers an honest expression of volcanic terroir and low-intervention viticulture.

The Nana-Tsu-Mori (“Seven Forests”) site sits on volcanic clay and andesite bedrock planted with 13 distinct Pinot Noir clones. In addition, 100% whole-cluster native fermentation preserves floral energy and savory freshness. Therefore, this 2021 vintage delivers remarkable transparency, pure red fruit, and deep umami character.

Tasting Profile & Sensory Character

  • Aromatics: First, aromas of wild mountain strawberry, sour cherry, and dried rose petals fill the glass. Soon after, notes of hinoki incense, wet forest floor, and shiitake dashi develop with air.
  • Palate: In addition, the palate feels light, vibrant, and focused on pure fruit. Silky tannins frame savory hints of tart cranberry, red tea, and crushed volcanic rock across a long, clean finish.

Service & Culinary Pairings

Serving Suggestions: First, pour at cool cellar temperature (57°F–61°F / 14°C–16°C) in wide Burgundy stems. Next, allow 30 minutes of air in the glass so the delicate botanical notes can open fully.

Recommended Pairings: Because of its savory balance and umami undertones, this Pinot Noir matches dashi-focused cuisine:

  • Charcoal-grilled duck breast with scallions (Kamo Negi)
  • Wild mushroom risotto or sautéed king oyster mushrooms
  • Miso-marinated black cod or pan-seared salmon
  • Roast chicken, quail, or herb-crusted lamb chops

Collector Notes & Cellar Potential

Domaine Takahiko releases bottles through tight allocations, making them exceptionally scarce outside Japan. While enjoyable now with decanting, this 2021 vintage will age gracefully through 2033 and beyond.
