Terroir & Viticulture
The cuvée takes its name from the 13th-century Saint-Christophe chapel crowning the Hermitage hill. Specifically, Jaboulet harvests this wine from premier granite and limestone plots. Ancient vines in Les Bessards provide muscular structural power and iron minerality. Meanwhile, parcels in Le Méal and Les Rocoules contribute sun-drenched stone fruit and exotic spices.
The 2003 growing season delivered record-breaking temperatures and intense sunshine from June through August. However, the hill’s oldest vines dug deep into the rock to find moisture. Furthermore, harvest began early in September to prevent grapes from losing balance. Thus, the hand-picked Syrah clusters retained impressive phenolic ripeness and thick skins.
Vinification & Craftsmanship
In the cellar, the Jaboulet team vinified this extreme vintage with artisan care. First, the estate sorted the hand-harvested grapes rigorously. This step eliminated any sunburned berries before crushing. Subsequently, fermentation took place in temperature-controlled vats with indigenous yeasts.
The wine then matured for roughly 18 months in classic French oak barriques. The estate utilized approximately 25% new oak to frame the massive fruit weight. In addition, the wine was bottled with minimal handling to safeguard its long-term evolution. Decades in bottle have now melted its tannins into pure velvet.
Tasting Notes
In the glass, the wine displays a dense, opaque garnet core with a dark ruby rim. The nose immediately erupts with decadent aromas of roasted plum, crème de cassis, and espresso bean. In addition, rich nuances of dark chocolate, smoked meat, vintage leather, and licorice emerge with air.
On the palate, the wine feels broad, full-bodied, and remarkably velvety. Fully melted, sweet tannins coat the mouth with flavors of blackberry liqueur and graphite.
