Terroir & Viticulture

Le Haut-Lieu is a 9-hectare historic vineyard situated on the premier plateau of Vouvray. Specifically, the site features deep, heavy brown clay and chalky limestone (tuffeau) subsoil. The water-retaining clay provides steady hydration to the old vines during warm summers. As a result, the grapes develop opulent fruit weight while maintaining remarkable tension.

Meanwhile, the 1989 growing season saw an extraordinary heatwave and an exceptionally sunny autumn. These ideal conditions stimulated extensive noble rot (Botrytis cinerea) across the vineyard. Furthermore, vineyard workers performed multiple selective pickings (tries) by hand. Thus, only concentrated, botrytized Chenin Blanc clusters entered the cellar.

Vinification & Craftsmanship

In the cuverie, Noël Pinguet vinified with classical, low-intervention methods. First, the botrytized grapes underwent slow, gentle pressing in traditional pneumatic presses. Spontaneous fermentation took place in large, neutral oak demi-muids using exclusively native yeasts.

Moreover, Pinguet allowed the fermentation to stop naturally in the cold cellars, preserving natural residual sugar. The wine matured on fine lees in deep tuffeau caves carved directly into the hillside. In addition, Huet bottled the cuvée early to trap its primary aromatic vitality. Decades of bottle aging have now resolved the sugar and acidity into timeless harmony.

Tasting Notes

In the glass, the wine shows a luminous amber-gold hue with bright copper glints. The nose immediately erupts with decadent aromas of dried apricot, candied ginger, and orange marmalade. In addition, complex secondary notes of acacia honey, beeswax, saffron, and wet wool develop with air.

On the palate, the wine delivers a luxurious, viscous texture balanced by laser-like acidity. Flavors of poached quince, quetsch plum, and baked apple coat the entire palate. Meanwhile, a brilliant vein of tuffeau limestone minerality prevents any heavy sweetness.
