Overview & Provenance
The 2016 Clos Cibonne Cuvée Spéciale des Vignettes Côtes de Provence Rosé is the estate’s flagship historic cuvée, sourced from their oldest Tibouren vines. Overlooking the Mediterranean near Toulon, these ancient vines produce fruit with intense sapidity and savory depth. Consequently, aging in century-old foudres under a film of flor yeast creates a wine of extraordinary character.
The 2016 growing season was balanced and temperate in Provence, providing ripe phenolic development and vibrant acidity. In addition, bottle maturation has allowed its initial fruit to integrate with delicate tertiary spice. Therefore, this bottle showcases the distinctive, nutty, and mineral-laden style that makes Clos Cibonne a cult favorite.
Tasting Profile & Sensory Character
- Aromatics: First, aromas of blood orange, dried cranberries, and rose petals fill the glass. Soon after, subtle hints of raw almond, dried garrigue herbs, crushed stone, and orange marmalade unfold.
- Palate: In addition, the palate feels expansive, silky, and energetic, lifted by fresh coastal salinity. Savory herbal and citrus notes lead into a long, mouthwatering finish.
Service & Culinary Pairings
Serving Suggestions: First, serve at 54°F–58°F (12°C–14°C) in generous Burgundy glasses. Next, decant for 20 minutes to allow the wine’s savory flor notes to bloom.
Recommended Pairings: Because of its structural weight and savory depth, this wine pairs best with hearty seafood and white meats:
- Grilled octopus with smoked paprika and olive oil
- Pan-roasted veal chops with rosemary butter
- Herb-roasted Cornish hen or quail
- Charcuterie boards featuring prosciutto and cured olives
