Overview & Provenance
The 2015 Domaine Philippe Livera Chapelle-Chambertin Grand Cru (Domaine des Tilleuls) is a powerful, dark-fruited Burgundy from one of Gevrey-Chambertin’s smallest grand crus. Damien Livera crafts this cuvée from ancient Pinot Noir vines planted on stony, shallow limestone soils. As a result, this rare bottle combines grand cru muscle with surprising aromatic finesse.
The sun-blessed 2015 vintage produced small, thick-skinned grapes packed with deep color, ripe tannins, and intense fruit concentration. In addition, traditional vinification and aging in French oak casks built a wine of serious structure. Therefore, this bottle is now hitting a glorious drinking phase where fruit and tertiary depth meet.
Tasting Profile & Sensory Character
- Aromatics: First, aromas of black cherry, ripe blackberry, and cassis fill the room. Soon after, complex layers of purple flowers, cracked black pepper, woodsmoke, damp earth, and black truffle unfold.
- Palate: In addition, the palate is rich, deep, and structured with ripe, melting tannins. Vibrant dark fruit and licorice notes blend into a long, mineral-driven finish.
Service & Culinary Pairings
Serving Suggestions: First, pour at cellar temperature (60°F–64°F / 16°C–18°C) in wide Grand Cru stems. Next, decant for 45 to 60 minutes to allow its dense core of fruit to breathe.
Recommended Pairings: Because of its deep structure and savory spice, this Grand Cru matches hearty game and meats:
- Roast squab, pheasant, or venison with wild mushrooms
- Dry-aged prime ribeye steak with herb butter
- Herb-crusted rack of lamb with garlic purée
- Aged farmhouse cheeses like Époisses or Livarot
Collector Notes & Cellar Potential
Chapelle-Chambertin is one of the rarest grand crus in Gevrey, and Domaine Philippe Livera produces only a handful of barrels each year. This 2015 is entering its prime drinking window and will cellar easily through 2040.
